Ingredients You’ll Need
- 1/2 C Salsa Verde ( I use Herdez Brand )
- 4 Oz Cream Cheese ( I use Philadelphia Brand)
- 1 C Sharp Cheddar Cheese (Shredded)
- 2 C Chicken Stock ( I use Less Sodium or Sodium Free)
- 2 C Cooked Shredded Chicken (or rotisserie chicken)
- 1/2 tsp Fresh Cilantro ( Or dried either way)
- Serving Size: 1.5 cups
- Calories: 346
- Fat: 22g
- Carbohydrates: 3g net
- Protein: 32g
Yields Approximately 6 servings
Combine the first four ingredients.
Blend with a handheld immersion blender until smooth.
Then add cooked chicken and cilantro.
Heat in a sauce pot on the stove top until the temperature has reached 160 degrees or has been heated throughout, while stirring occasionally.
Then, using a ladle, place the soup into a bowl, your next step is garnishing.
Choose a garnish for the soup such as, additional shredded cheese and/or a dollop of sour cream and top with a sprinkling of fresh cilantro. ( If you do not have fresh cilantro, you can top with just the cheese.) Of course, all are optional.
This recipe is perfect for the Keto lifestyle of eating, because it only has 3g of net carbohydrates per 1.5 cups serving.
